The "rare and distinctive" charcoal muscle car was driven from Mustang Motorsports in Ferntree Gully, Melbourne at 3.45pm on October 11 by two men who were filmed loitering in front of the retailer, police said.
Footage shows a man slipping into the car yard in front of Mustang Motorsports while vehicles were being moved and the key was accessible. The car is the only one of its kind in Australia.
"This was an utterly brazen theft of someone's prized possession and done in broad daylight," detective senior constable Michael Gatt said.
"This is someone with a great love of vehicles who has worked hard to build this car and has had it taken away from him."
Further CCTV footage was released of the pair going to a fast food restaurant on Burwood Highway and reaching over the counter to allegedly steal a drink.
Police are asking people in Melbourne, wider Victoria and interstate to look for the charcoal Mustang with a blue stripe over the driver side doors, rear spoiler and a cobra badge on the front grill.
